8oz / 225g Granulated sugar
8 oz / 250ml Strong coffee
8 tablespoons Irish whiskey

    Distributing the syrup evenly to the layers….

    Spoon it on slowly and spread it around, as in the image. This will need to be done at least two or three times to soak each layer through adequately.

    Wait five minutes at least between each application to give the syrup a chance to soak in.

    Boil the syrup

    Dissolve the sugar in the coffee and bring to a boil for one minute. (Use a large pan for this, as it will bubble up aggressively.)

    Allow to cool

    Remove from heat and allow to cool COMPLETELY. When cool, add the whiskey and stir in gently.

    Spoon the coffee-and-whiskey syrup over the cake layers in turn. Allow 5-10 minutes each time for the syrup to soak in. Continue until the syrup is used up.
